Sherry Finished Whisky Sour

INGREDIENTS

  • 60ml Deanston Sherry Cask Finish
  • 22ml fresh lemon juice
  • 15ml honey syrup
  • 7ml Fino sherry
  • 7ml egg white (optional)
  • Lemon twist
  • 2 dashes Angostura Bitters (optional)

METHOD

  • STEP 1 Prepare the honey syrup by mixing equal parts honey and warm water.
  • STEP 2 Add Deanston Sherry Cask Finish, lemon juice, honey syrup, and Fino sherry to a cocktail shaker. If you're using egg white, add it here as well.
  • STEP 3 Shake the ingredients vigorously without ice for about 15 seconds if using egg white to create foam and emulsify the mixture.
  • STEP 4 Add ice to the shaker and shake again for another 15 seconds to chill the cocktail.
  • STEP 5 Strain the mix into a low-ball glass filled with ice.
  • STEP 6 Express the lemon peel over the drink by squeezing it to release its oils.
  • STEP 7 Garnish with a lemon twist and add a couple of dashes of Angostura bitter on top for a hint of spice (optional, but you'll look like a pro).
