Amontillado casks are like a secret sauce of whisky maturation—offering a whole new layer of complexity that’ll have you wondering why you haven’t tried it sooner. This sherry’s Spanish roots bring a nutty, slightly funky edge to the game, thanks to a maturation process that gets the best of both worlds: a yeast-covered “flor” phase (like Fino) followed by an oxidative aging period.
